Every Role a Starring Role - Disneyland Resort Environmental Integration Representative

This installment of "Every Role a Starring Role" from Disney Parks spotlights cast member Helen Jaco, an environmental integration representative at the Disneyland Resort. Helen helps reduce waste at the Disneyland Resort by working with various departments to increase environmental awareness and help them find creative ways to reduce, reuse, and recycle.

This is a particularly timely topic since April 2014 has been designated "Earth Month" (April 22 is Earth Day).

In this episode from the "Taste of Disney" series, Chef Jesse Tiscareno demonstrates the steps to making the Herb Panko-Crusted Rack of Lamb as offered by the Blue Bayou Restaurant in New Orleans Square at Disneyland, starting with a rich rosemary jus made with red wine, then a hearty white-bean stove-top cassoulet, the perfect pairing with the rich lamb.
